1/2 cup Corn Starch

6 Egg Yolksbeaten with a fork

6 cups Whole Milk

8-10 oz Bittersweet Chocolate Chips

6 oz Buttercut into small-ish pieces

For the whipped cream

3 cups Heavy Cream

3/4 cup Sugar

Making your own crustPlace the crackers from an entire box of graham crackers (that is typically a 14.4 oz box with 3 packages of 8 crackers) into your food processor. Pulse until they are crumbs. |

Add the sugar to the bowl of the food processor and mix a few more seconds. |

Pour the melted butter into the bowl and pulse until the crumbs start to come together. |

Divide the mixture between 3 pie pans and use your favorite tool to smush the crumbs into a a smooth and level crust. I use a metal measuring cup that has a 90 degree angled bottom. You can also use another pie pan to shape the crumbs. Just place it on top and push down until the crust forms then clean up a little. |

Heat and stir the pudding mix over medium-high heat until it thickens and coats the back of a wooden spoon. To test that, stick a wooden spoon into the pot so that it gets covered with the pudding then take it out and run your finger down the back side of the spoon. If you get a clean line (and some pudding on your finger) then it's ready. |

Topping the pieYou don't have to but I like to top the pies with whipped cream. In your mixer (or by hand if you need a tricep workout) pour the heavy cream into the bowl and add the sugar. Whip until you get stiff peaks - but not butter. |
