    Steps

    1
    Done
    10 minutes

    Making your own crust

Place the crackers from an entire box of graham crackers (that is typically a 14.4 oz box with 3 packages of 8 crackers) into your food processor. Pulse until they are crumbs.

    2
    Done

Add the sugar to the bowl of the food processor and mix a few more seconds.

    3
    Done

Pour the melted butter into the bowl and pulse until the crumbs start to come together.

    4
    Done

Divide the mixture between 3 pie pans and use your favorite tool to smush the crumbs into a a smooth and level crust. I use a metal measuring cup that has a 90 degree angled bottom. You can also use another pie pan to shape the crumbs. Just place it on top and push down until the crust forms then clean up a little.

    Done
    8 minutes

Bake the pie shells in the oven for 8 minutes until they stick together. They will be delicate so don't get too rough with them.

    20 minutes

    Make the pie filling

In a large pot (I used a medium dutch oven from Le Creuset) add the sugar, corn starch, and salt then mix well. Add the egg yolks and milk and stir well to combine.

    7
    Done

Heat and stir the pudding mix over medium-high heat until it thickens and coats the back of a wooden spoon. To test that, stick a wooden spoon into the pot so that it gets covered with the pudding then take it out and run your finger down the back side of the spoon. If you get a clean line (and some pudding on your finger) then it's ready.

    8
    Done

Take the pudding off the heat and add the chocolate chips. Stir until the chocolate melts.

    9
    Done

Add the butter and stir until incorporated.

    10
    Done

Pour the filling into the pie shells and smooth out as best as you can.

    5 minutes

    Topping the pie

You don't have to but I like to top the pies with whipped cream. In your mixer (or by hand if you need a tricep workout) pour the heavy cream into the bowl and add the sugar. Whip until you get stiff peaks - but not butter.

I also shaved a little milk chocolate on the top to make it look nice. Totally optional.
