Directions
These take time! But OMG are they worth it. I like a cream cheese frosting on my cinnamon buns but a simple sugar glaze does the job too.
Steps
1

|
Blooming the YeastPut the milk and 1/4 cup of sugar into a small pan. Heat over medium until the sugar dissolves and the milk is warm but not hot - about 110 degrees. |
2
Done
|
Remove from the heat then add the yeast. Let sit for about 5 minutes until it gets foamy. If that doesn't happen then your yeast isn't alive and your buns won't rise. |

|
Make the DoughAdd the flour, salt, and baking powder to the bowl of a mixer and combine. |
4
Done
|
Add the milk mixture then the egg and melted butter. |
5

|
Mix the dough until it comes together then switch to a dough hook. Knead the dough for about 5 minutes until it's smooth and elastic. You can also do this by hand. |
6
Done
2 hours
|
Wait...Put the dough into an oiled bowl. Then over the bowl and place in a warm spot. Let rise for about 2 hours until it's doubled in size. |
7
Done
1 hour
|
More Waiting...Punch down the dough and place in the fridge for at least an hour. |
8
Done
15 minutes
|
Make the BunsOnce the dough is cold, take it out and place on a floured surface. Roll out to an even 1/4 inch thickness and as close to a rectangle as you can get. |
9
Done
|
Mix the brown sugar, cinnamon and pumpkin pie spice together in a bowl. |
10
Done
|
Brush the dough with melted butter then sprinkle all of the sugar mix on top. Sprinkle any left over butter onto the sugar. |
11
Done
|
Starting at the long side of the dough, roll the dough into a log that should be about 16 inches long. |
12
Done
|
Slice the dough into 12 buns and place then into a 9x13 buttered baking dish. |
13
Done
1 hour
|
Wait some more...Cover the buns and place in a warm spot for about an hour. Alternatively, you can place them in the fridge overnight. In the morning, take them out and let them warm and get fluffy for about 2 hours. |
14
Done
|
Bake the buns at 375 degrees until golden - 35-40 minutes. Serve warm. |
