Ingredients

Adjust Servings:
3 Eggs Large
3/4 cup Sugar
2 tsp Vanilla Extract
4 oz Butter Melted and cooled
1 tsp Anise Seeds
1 3/4 cups A.P. Flour
2 tsp Baking Powder

These are wonderful anise flavored crisp cookies that go great with your coffee.

It’s worth noting that you will need a Pizzelle iron for this recipe.  You can get one here or at your local kitchen shop.  Mine was less than $40.00.

Turn on and get the pizzelle iron warming up.

2-3 minutes

Beat the eggs and sugar (either in a mixer or by hand) until they are light yellow.

Add the vanilla extract and the cooled melted butter. Mix well.

Add 1 cup of the flour, the baking powder and the anise seeds. Mix gently until blended.

Add the rest of the flour and mix until a stiff batter forms. It should be somewhere between muffin batter and cookie dough.

Baking the Pizzelles

Once the iron is hot, spray it with non-stick oil spray to prevent any sticking.

Put one big tablespoon (or a large cookie scoop) on the iron. I like to try and get it just slightly behind the center so that it spreads forward.

50-60 seconds

Close the lid (you don't have to squeeze it) and allow the cookies to cook for about a minute. Once they are golden brown, remove them and let cool on a cooling rack. Keep cooking!
