Ingredients

6 Shallots
20 cloves Garlic I used already peel garlic for easy access.
4 inch nub Ginger
5 stalks Lemongrass Feel free to use a paste. I like the fresh stuff and I can get to it easily.
1 tbs Coriander Toasted and ground
2 tbs Tumeric Add more if you like!
2 tbs Madras Curry Powder
1 bunch Cilantro
5 or more Thai Chilis I add about 15 dried chilis.
1 tbs Salt or to taste

    Making your own curry paste can seem intimidating but it’s a much better end product than using a jar of the stuff from your local big chain store.  It makes quite a bit so I use this paste to make Yellow Curry Mixed Nuts.  It also freezes really well so you can keep it for another day. Give it a try!

    Roasting some stuff

    Preheat the oven to 350 degrees. Grab some aluminum foil to wrap the aromatic items in. Peel and trim the shallots. Peel the ginger if it has a thick skin. Wrap the ginger, garlic and shallots together in the foil and bake in the oven for 30 minutes.

    Everything else

    Once the garlic, shallots and ginger are roasted and cooled a bit, put them into a food processor.

    Peel the tough outer layers from the lemongrass and roughly chop it. Add it to the food processor.

    Add the remaining ingredients to the food processor. Process until it comes together into a paste.

    Package it up and store either in the fridge or the freezer until you want to make some delicious curry sauce for dinner. Or try roasting some cashews with it.
